grout depth

    does the silicon caulking have to fill to the the depth of the tile. That will be a lot of caulk. Or can you use grout so deep then silicon on top

    You only need enough silicone to create a seal between the wall and tile, it's covered by base or quarter round so it won't be visable. Where you seal next to a tub, shower base or any other areas that aren't covered by trim, then you will want to fill the joint completely. Sealing the perimeter is a great idea in bathrooms, laundry rooms, around dishwashers ect.. other types of rooms don't need to be sealed. Grout should never be used at the perimeter expansion space on any installation.
